Lunch Ideas for Me!

I am on a very strict NO CARB diet due to the medication I am on and can really only handle things that have 15g or less of carbs in them before I get sick.

I have been eating tons of salads and veggies and fruits and whole grain 100 calorie flat bread sanwiches EVERY DAY FOR 7 MONTHS and I am sick of it.  I am so bored. Right now I am eating a dish of raw carrots and celery but my stomach is saying "ENOUGH!!!!!!"

Does anyone have any creative ideas I can make for lunch?  Just for myself, nothing to feed a family.  I fear I am going to turn into a head of lettuce.

Oh, I am empathizing with you right now.  I wish I could offer something great here, but I got nothing.  I am the carb queen...I'd starve to death without them since I eat very little meat.  Is this a permanent thing or will you be able to eat them again someday?

Yikes...I am no good with no carbs...maybe try to google no carb meals and see what comes up.

Hmmm...what about some homemade soup?  Homemade Creamy Tomato Soup and Grilled Cheese (on that bread you use) would be good.  I made a to die for Pumpkin soup last night and sprinkled pecans and dried cranberries on top.  Grilled skirt steak is always good and you could eat that with chimichurri sauce and black beans.  Don't know if you like to cook, but I have a super yummy Eggplant Parmesean recipe that's layers of eggplant, spicy tomato sauce and cheese.  It feels like you are eating pasta, but there isn't any pasta in it!  

Good luck with it!  Sometimes I wish I couldn't eat carbs....I'd probably lose this weight that's been hanging around way too long....

Just realized that the dinner I'm making now happens to be low carb so I thought I'd throw this out there for you too!   Crab Salad and Roasted Asparagus :)

I'm a carbophile too. I don't think I would last as long as you have, Alessia! I did the South Beach diet for a short while -- I know there are recipes in that book that are low-carb. You could probably get the book at the library or at half.com pretty cheap.

So Many recipes to share

Theres. lettuce wraps that is exactly the same as mexican food, but no tortillas, so you can put inside meet with cheese, or fish, or chicken, and add sour cream on top and its great

quiche, that its only eggs and sautee veggies, cooked all together

or even with chicken and sautee onions

veggies o gratin ( veggies cooked in the oven with chese on top, garlic and a bit of oil)

almond seared fish or plain lemon fish or parmesan crusted fish with veggies on the side or mashed coliflower
